A Gluten Free NO D DAY

To honor No D Day 2010, I decided to take it to the kitchen….

We had pulled BBQ pork sandwiches the other day.
And I ate mine on a bun.
Oh, yes I did.
The rebel that I am.
Honestly?
It was okay.
Sugar really liked hers.
I’ve learned to be content without the bun.
I also made some sweet potato fries…and they totally ROCKED!
 
1 Large Sweet Potato
2 TBSP Extra Virgin Olive Oil (EVOO)
Cut sweet potato into thin slices.
Place in gallon sized bag, add EVOO, and coat each slice.
Bake at 350 for 20 minutes
Turn each slice over and bake an additional 20 minutes.
1 Tsp Salt
1 Tsp Sugar
1 Tsp Cinnamon
1 Tsp Chili Powder
Mix together and sprinkle over fries before baking (as I did)
or afterwards, just before serving.
PS — Ninjabetic….feel free to serve with bacon 🙂

    I saw that brand at Sprouts and was wondering if it was good. They do look much better than the Kinnikinnick buns. Maybe we’ll try them. And those sweet potato fries look super yummy! We’ll definitely be trying those soon!

    OH YUMMO Wendy. I have a bunch of potatoes (from the farm) that I need to bake up for some home fries. I am gonna try this (sans the cinnamon…or would it taste good on normal potatoes?).

    When I was pregnant with B I had to stop eating pork. Some kind of aftertaste appeared, and it just isn’t lovin me anymore. I ALWAYS try a bite to see I can eat it…but no, the taste isn’t right. 🙁 But pulled pork, I can sometimes get away with…if it is SMOTHERED in sauce. YUM!
